Caribbean Wedding Cake Recipe
Bring the Aroma of the Caribbean to Your Special Day
A unique way to add a touch of the Caribbean to your wedding day is to bake a Caribbean wedding cake. The cake can be centered around the Caribbean flavor profile, with ingredients like coconut, pineapple, and citrus, or be more traditional and just incorporate a few Caribbean touches, like a rum-flavored glaze. No matter which way you decide to go, a Caribbean wedding cake will be a showstopper.
Ingredients for the Cake
- 3 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 cup unsalted butter, at room temperature
- 2 cups granulated sugar
- 4 large eggs, at room temperature
- 1 teaspoon vanilla extract
- 1 cup buttermilk
- 1 cup shredded coconut
- 1 cup finely diced pineapple
- 1 cup freshly squeezed orange juice
- 1/2 cup freshly squeezed lime juice
Instructions to Make the Cake
Preheat your oven to 350 degrees F. Grease and flour two 9-inch round cake pans. In a medium bowl, whisk together the flour, baking powder, and baking soda. Set aside.
In the bowl of an electric mixer, cream the butter and sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Add the vanilla and mix to combine. With the mixer on low, add the flour mixture in three parts, alternating with the buttermilk. Mix until just combined.
Gently fold in the coconut, pineapple, orange juice, and lime juice. Divide the batter evenly between the prepared pans. Bake for 25 to 30 minutes, or until a toothpick inserted into the center comes out clean. Let the cakes cool in their pans for 10 minutes, then turn out onto a wire rack to cool completely.
The Rum Glaze
To make the rum glaze, whisk together 1/4 cup dark rum, 1/4 cup freshly squeezed orange juice, 1/4 cup freshly squeezed lime juice, and 2 cups confectioners' sugar. The glaze should be thick but still pourable. If it's too thick, add a little more orange juice. If it's too thin, add a little more confectioners' sugar.
When the cakes are cool, place one cake layer on a serving plate. Drizzle with half of the glaze and let it soak in. Place the second cake layer on top and drizzle with the remaining glaze. Serve the cake with a dollop of freshly whipped cream.
