Ingredients



For the Cake:
  • 1/2 cup butter, at room temperature

  • 1/2 teaspoon salt
  • 1/2 cup buttermilk


For the Mousse:
  • 3/4 cup whipping cream
  • 1/4 cup cocoa powder
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup semi-sweet chocolate chips


For the Hazelnut Praline:
  • 1/2 cup hazelnuts, toasted and chopped
  • 1/4 cup granulated sugar
  • 2 tablespoons butter
  • 1 tablespoon water


For the Chocolate Glaze:
  • 2 tablespoons butter
  • 2 tablespoons cocoa powder
  • 1/4 cup semi-sweet chocolate chips
  • 1/4 cup whipping cream


For the Garnish:
  • Whipped cream
  • Chocolate covered hazelnuts or Ferrero Rocher

Instructions

Cake

Preheat oven to 350°F (175°C). Grease and line two 9-inch round baking pans with parchment paper. Set aside.

In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs and vanilla extract until combined. In a separate bowl, sift together the flour, baking powder, baking soda, and salt. Slowly add the dry ingredients to the wet ingredients and mix until combined. Add the buttermilk and mix until just combined.

Divide the batter between the two prepared pans and bake for 25-30 minutes or until a toothpick inserted into the center of the cakes comes out clean. Allow the cakes to cool in the pans for 10 minutes before transferring them to a wire cooling rack to cool completely.

Mousse

In a medium bowl, whip the cream until it begins to thicken. Add the cocoa powder, sugar, and vanilla extract and continue to whip until stiff peaks form. Fold in the chocolate chips.

Spread the mousse onto one of the cooled cakes and place the other cake on top. Place the cake in the refrigerator to set while you prepare the hazelnut praline.

Hazelnut Praline

In a medium saucepan, combine the hazelnuts, sugar, butter, and water. Cook over medium heat, stirring constantly, until the sugar is melted and the mixture is bubbling. Pour the praline onto a parchment-lined baking sheet and spread it out as thinly as possible. Allow it to cool completely.

Once the praline has cooled and hardened, break it into small pieces and sprinkle it over the top of the mousse cake.

Chocolate Glaze

In a small saucepan, melt the butter over low heat. Add the cocoa powder and stir until combined. Add the chocolate chips and cream and stir until the chocolate is melted and the mixture is smooth.

Remove the cake from the refrigerator and pour the glaze over the top, spreading it evenly with a spatula. Return the cake to the refrigerator to set.

Garnish

Once the cake is set, remove it from the refrigerator and top with whipped cream and chocolate-covered hazelnuts or Ferrero Rochers. Serve immediately.
