3. Add the light brown sugar, eggs, sunflower oil, vanilla extract, carrots, sultanas or raisins, walnuts and desiccated coconut to the bowl and mix together with a wooden spoon until everything is well combined.

4. Pour the mixture into the prepared cake tin and bake in the preheated oven for 1 hour and 10 minutes, or until golden-brown and a skewer inserted into the centre of the cake comes out clean.

5. Allow the cake to cool in the tin for 10 minutes before turning out onto a wire rack to cool completely.
