Ingredients

  • 110g butter, softened
  • 110g caster sugar
  • 2 eggs
  • 110g self-raising flour
  • 2 tablespoons milk
  • 1 teaspoon almond extract
  • 15 maraschino cherries, halved and drained
  • 2 tablespoons flaked almonds

Instructions

Preheat oven to 180°C (160°C fan, gas mark 4). Grease and line a 20cm round cake tin.

In a large bowl, cream together butter and sugar until light and fluffy. Beat in eggs, one at a time, and mix in the almond extract. Gradually add the flour and milk, and mix until combined.

Spoon the mixture into the prepared tin and level the top. Arrange the halved cherries over the top of the cake, pressing them lightly into the mixture. Sprinkle over the flaked almonds.

Bake for 25 minutes, until golden and a skewer inserted into the centre of the cake comes out clean. Leave to cool in the tin before turning out onto a wire rack.
