Family Fruit Cake Recipe
Ingredients
Making this delicious family fruit cake is a lot easier than you might think. First, you'll need the following ingredients: 230g plain flour, 230g softened butter, 230g soft brown sugar, 4 large eggs, grated zest of 2 oranges, 4 tablespoons of orange juice, 150g raisins, 150g sultanas, 150g mixed candied peel, 2 teaspoons mixed spice, 2 teaspoons ground cinnamon, and 2 tablespoons of black treacle.
Instructions
To make the fruit cake, preheat your oven to 140C/275F/Gas 1 and line a 20cm/8inch round cake tin with greaseproof paper. Place the butter and sugar in a large bowl and beat until light and creamy. Add the eggs, one at a time, and beat until combined. Add the orange zest and juice, and mix until combined.
Sift together the flour, spices and a pinch of salt, then fold into the butter and sugar mixture until combined. Next, add the raisins, sultanas, mixed candied peel and treacle and mix until combined.
Spoon the mixture into the prepared cake tin and level the surface. Bake in the preheated oven for 2-2 ½ hours, or until a skewer inserted into the centre of the cake comes out clean. Leave to cool in the tin for 10 minutes before turning out onto a wire rack to cool completely.
Serving
Once cooled, the cake can be wrapped in greaseproof paper and stored in an airtight container for up to two weeks. Serve the cake on its own, with a cup of tea, or with a dollop of cream or ice cream.
