Ingredients

This fun and festive cake is perfect for a child’s birthday celebration. It’s an easy cake to make and will definitely be a hit! To make this cake you will need the following ingredients:

  • 1 box of cake mix (chocolate or white cake mix works best)
  • 3 eggs
  • 1/3 cup of vegetable oil
  • 1 cup of water
  • Red, white, and black food coloring
  • 1/2 cup of butter, softened
  • 2 cups of powdered sugar
  • 2 tablespoons of milk
  • 1 teaspoon of vanilla extract
  • White fondant
  • Black and red gel food coloring
  • Red, black and white sprinkles
  • 2 9-inch round cake pans

Instructions

Start by preheating your oven to 350 degrees. Grease your two 9-inch round cake pans with butter or shortening, and set aside. In a large bowl, mix together your cake mix, eggs, oil, and water until everything is well combined. Divide the batter evenly between the two pans. For the Cat in the Hat design, take some of the batter from one pan and mix it with some red food coloring to make it a reddish-pink color. Then, take some of the batter from the other pan and mix it with black food coloring to make it a gray color. Once your colors are mixed, pour them into the cake pans, alternating each color until all the batter is used up. Bake your cakes for 35-40 minutes, or until a toothpick inserted in the center comes out clean. Let the cakes cool in the pans for 15 minutes before transferring them to a cooling rack.

Meanwhile, prepare your buttercream frosting. In a medium bowl, cream together the butter and powdered sugar until light and fluffy. Add in the milk and vanilla extract and mix until everything is combined. If the frosting is too thick, add a little bit more milk until it reaches a spreadable consistency. To make the Cat in the Hat design, divide the frosting into two bowls. Mix the red food coloring into one bowl and the black food coloring into the other. Once your cakes are completely cooled, spread the red frosting on the top of one cake and the black frosting on the top of the other. Place the two cakes together and spread the white frosting over the top and sides.

Next, make the Cat in the Hat’s hat. Color some white fondant with black and red gel food coloring. Roll out the fondant and cut out a circle that is slightly larger than the circumference of the cake. Place the fondant on top of the cake and use a knife to create the brim of the hat. Decorate the hat with red, black, and white sprinkles. Place the cake in the refrigerator to cool for at least 30 minutes before serving.
