Ingredients

  • 1/2 cup butter, softened
  • 1/2 cup white sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 3/4 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/4 cup milk
  • 1 cup mixed dried fruit (such as raisins, cranberries, cherries and apricots)
  • 1/2 cup chopped walnuts
  • 1/4 cup butter, melted
  • 1/4 cup white sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup confectioners' sugar
  • 1 tablespoon milk

Instructions

Step 1: Preheat the Oven

Preheat your oven to 350 degrees F (175 degrees C). Grease a 10-inch Bundt pan with butter or cooking spray.

Step 2: Prepare the Cake Batter

In a medium bowl, cream together the 1/2 cup butter and 1/2 cup sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla. In a separate bowl, combine the flour, baking powder, and salt. Add the dry ingredients to the creamed mixture alternately with the milk, beating well after each addition. Finally, mix in the dried fruit and walnuts.

Step 3: Bake the Cake

Pour the cake batter into the prepared Bundt pan. Bake in the preheated oven for 45 to 50 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let the cake cool in the pan for about 10 minutes, then turn out onto a wire rack to cool completely.

Step 4: Prepare the Glaze

In a small bowl, mix together the 1/4 cup melted butter, 1/4 cup sugar, and cinnamon. Spoon the mixture over the top of the cooled cake.

Step 5: Prepare the Frosting

In a separate bowl, mix together the confectioners' sugar and 1 tablespoon of milk. Drizzle the frosting over the top of the cake. Allow the cake to cool completely before serving.
