Instructions
Preheat the oven to 180°C (350°F/Gas 4). Grease and line two 20cm (8 inch) sandwich tins.
In a large bowl, cream the butter and sugar together until light and fluffy. Beat in the eggs one at a time, then add the red food colouring, vanilla extract, flour, cocoa powder, and buttermilk. Beat together until well combined.
Divide the mixture evenly between the two tins and bake in the preheated oven for 25-30 minutes, or until a skewer inserted into the centre comes out clean. Leave to cool in the tins for 10 minutes, then turn out onto a wire rack to cool completely.
To make the cream cheese frosting, cream the butter and cream cheese together until light and fluffy. Beat in the icing sugar a little at a time until the desired consistency is reached.
