Clementines are one of my favorite fruits, and I'm always looking for new ways to use them. This Nigella's Clementine Cake is one of those recipes that I come back to time and time again. It's a light, moist and fragrant cake, full of warm winter spices, and the tartness of the clementines balances the sweetness of the cake perfectly.

Ingredients

  • 6 clementines
  • 8 oz butter, softened
  • 8 oz caster sugar
  • 4 eggs
  • 8 oz self-raising flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground nutmeg
  • 3 tablespoons demerara sugar

Instructions

Preheat the oven to 350°F and butter and line a 9-inch round cake pan. Place the clementines in a saucepan, cover with water and bring to the boil. Simmer for 1 hour or until the clementines are soft. Drain and allow to cool. Once cool, cut the clementines in half and remove the pips. Place the clementines in a food processor and blend until smooth.

In a large bowl, cream the butter and sugar together until light and fluffy. Add the eggs one at a time, beating well after each addition. Add the clementine puree and mix until combined. Sift in the flour, baking powder, cinnamon, ginger and nutmeg and fold into the mixture until fully combined. Pour the mixture into the prepared cake tin and sprinkle over the demerara sugar.

Bake in the preheated oven for 45 minutes or until a skewer inserted into the center of the cake comes out clean. Allow to cool in the tin for 10 minutes before turning out onto a wire rack to cool completely.
