    • 1 cup (2 sticks) unsalted butter, at room temperature
    • 4 cups powdered sugar
    • 1 teaspoon pure vanilla extract
    • 2-4 tablespoons heavy cream, as needed
  • For the decoration:
    • 1/2 cup white chocolate chips
    • Colored sprinkles

Instructions:

Step 1: Make the Chocolate Cake Layers

Preheat the oven to 350°F. Grease and flour two 8-inch round cake pans and set aside. In a medium bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt. Set aside.

In a large bowl, using an electric mixer, beat together the oil and sugar. Add the eggs, one at a time, and beat until combined. Add the buttermilk and vanilla extract and mix until combined. With the mixer on low speed, slowly add the dry ingredients and mix until just combined. Divide the batter evenly between the prepared cake pans and bake for 25-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean.

Add the vanilla extract and mix until combined. Add the heavy cream, one tablespoon at a time, and mix until combined and the desired consistency is reached.

Step 4: Assemble and Frost the Cake

Place one chocolate layer on a cake stand or plate. Top with 1/3 of the buttercream and spread evenly. Place one vanilla layer on top and repeat with 1/3 of the buttercream. Place the remaining chocolate layer on top and spread the remaining buttercream over the top and sides of the cake. Smooth the sides with a bench scraper and the top with an offset spatula.

Step 5: Decorate the Cake

In a small bowl, melt the white chocolate chips in the microwave in 30 second intervals, stirring each time, until melted and smooth. Pour the melted chocolate into a small zip-top bag and snip off a tiny corner. Drizzle the melted chocolate over the top of the cake. Sprinkle with the sprinkles and let the chocolate set.
