Instructions

Preheat oven to 350°F. Grease and flour two 8-inch round cake pans.

In a separate bowl, mix together the oil, sugar, eggs and vanilla extract. Slowly add the dry ingredients to the wet ingredients and mix until just combined. Add the buttermilk and mix until combined.

Divide the batter evenly between the two cake pans. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean. Allow the cakes to cool completely before frosting.

To make the chocolate drip, melt 1 cup of the chocolate chips in a double boiler or in the microwave. Once melted, set aside to cool slightly.

In a medium bowl, mix together the heavy cream, vanilla extract, and sugar until soft peaks form. Gently fold in the melted chocolate until combined.

Spread the frosting over one of the cakes and top with the other cake. Spread the remaining frosting over the top and sides of the cake. Drizzle the melted chocolate over the cake, allowing it to drip down the sides. Sprinkle the remaining chocolate chips over the top of the cake. Serve and enjoy!
