Ingredients:
To make this delicious date and walnut cake you will need the following ingredients: 250g of soft, pitted dates; 120g of plain flour; 120g of self-raising flour; 120g of butter; 120g of light brown sugar; 2 large eggs; 1 tsp of baking powder; 120g of walnuts; and a pinch of salt.
Instructions:
Preheat your oven to 180°C/Gas Mark 4. Grease and line a 20cm round cake tin.
In a small bowl, mix together the plain and self-raising flours, baking powder and salt.
In a large bowl, cream together the butter and light brown sugar until light and fluffy. Beat in the eggs one at a time.
Add the flour mixture to the butter mixture and mix together until just combined. Add the dates and walnuts and fold in until evenly distributed.
Pour the mixture into the prepared tin and bake in the preheated oven for 40 minutes or until a skewer inserted into the centre of the cake comes out clean.
Allow the cake to cool in the tin before turning out onto a wire rack to cool completely.
